This is also called Flowering Cabbage but there is no actual flower. The central color part is a small section of the leaves of the vegetable and there are many more layers of green leaves. The color has not been enhanced. It is perfectly edible and is cooked, used in salads or as garnish. Landscape gardeners use it as an attractive feature.
