Hi, I expect many people will think of this, but
Fresco Al Fuego seems good.
It means Fresh to the Fire in Spanish.

Chicken Del Fuego (Chicken of the fire) - so many Americans say Polo for chicken instead of POY-oh, so I'm going with Chicken instead of Pollo.

(I first thought of Chicken Corazon, going with the heart-healthy thought, but then decided that 'Chicken Heart' wasn't really such a good idea! lol )

El Pollo Asado

Meaning: The Roasted (or Grilled) Chicken

(Did a search online and found lots of MEALS for Pollo Asado but didn't come across any restaurants with that name...but that doesn't mean there isn't any I just didn't find any with the searches I did online.)

El Pollo Llameante (The Flaming Chicken)

This name combines flame grilling, chicken and the name of the business being considered for purchase, (Aca Pollo).

While the word "llameante" may cause non-spanish speakers to stumble a bit, I believe a phonetic spelling could be incorporated into marketing and menu documents.

Finally, the word "llameante" could offer a unique hook due to its beginning sounding like "yummy" in english.

(I love the fact that the literal translation in English is "Chicken Daddy" A great, albeit much overused, tagline, "Who's your daddy?")

"Aprisa Fresco" meaning fast, fresh. I wanted something that not only had a nice ring to it, but also would be easily pronunced by people anywhere in the country. For this reason I avoided anything with "pollo" as I've heard too many people here in Ohio butcher that word. I realize that chicken is one of their main products, but I felt that a name that includes "chicken" could be too limiting (as Boston Chicken found out all to soon). "Aprisa Fresco" sounds light and fresh, and suggests Mexican without the cliched "mexicano, tanquiria, ristorante, etc).
