Author's Note: My favorite soup - Nacho Potato Soup.
1 box potato au gratin mix (with dried potato slices)
1 can diced tomatoes with chili peppers (such as brand name RoTel)
canned or fresh kernel corn optional (I left it out)
2 cups water
2 cups milk
2 cups diced cheese of your choice (Velveeta/processed cheese melts smoother)
hot sauce to taste
Combine potato slices, au gratin mix, tomatoes & chilis, corn and water in large sauce pan. Bring to a boil and reduce heat, simmer on low to medium for about 16 minutes until the potatoes are soft. Add milk and cheese, stirring often until the cheese is melted. Add hot sauce to taste.
Serves 4 to 6 depending on serving size. Very good for lunch on a cold day.
Fresh ingredients can be substituted if available. Just use au gratin mix and throw the rest of the potato boxed kit away.
